Choosing an extra virgin olive oil is never easy, here are some tips to understand if we are going to buy a quality oil.
The consumer of extra virgin olive oil when choosing an uncertified oil is not sure of buying a quality product. The chemical parameters of the law are very high, to the advantage of the oil industries and the large groups that bottle and to the detriment of the quality of the oil that we bring to the table.
Certain certifications whose regulations dictate much more stringent rules and which trace the olives from the field to the mill give greater guarantees to the consumer both as regards the quality of the product and its origin. The producers (olive growers, millers, bottlers) who follow the PDO specification have an identity card that tracks the olives and oil and helps to recognize the excellent product.
